Turkey Strawberry and Blackberry Salad with Fresh Peach Dressing
I got kind of fancy plating this for Dave’s lunch last week, so we decided to take a picture and post it.  ALSO because of the dressing, it was SO FABULOUS!  Dave was on a No Fat week prepping for his gallbladder flush this past weekend.  So, that meant no oil in his dressing.  Well, I didn’t want him to have to taste only vinegar, so I somehow got the idea to Magic Bullet half of a peach with some red wine vinegar.  Voila!  A masterpiece was born!  Try it and be pleasantly surprised.  I’m sure it would be even better with a little oil oil blended in!

Turkey Strawberry and Blackberry Salad with Fresh Peach Dressing
1 Serving

Toss together:
1/2 cup shredded organic free-range turkey breast
1/3 cup organic black beans, rinsed
4-6 organic strawberries, rinsed, hulled and sliced.
A handful of organic blackberries, rinsed
Two handfuls of fresh organic spring greens and spinach, rinsed and dried

Peach Dressing
1/2 of an organic peach, rinsed (I left the peel on)
1/4 cup red wine vinegar
1/4 cup olive oil (optional)

Blend until smooth then drizzle over salad.

  1. Is this on the advanced plan? How do I know for future reference?

      Hi Sarah, This salad is Core Plan because it uses peaches and red wine vinegar. To make it Advanced Plan, you could use a different dressing all together, or replace the peach with Granny Smith apple or berries and replace the red wine vinegar with distilled white vinegar or apple cider vinegar.

      In the future, to tell if a recipe is Core or Advanced Plan, look at the bottom of the post for the “tags.” I will tag the recipe either Core or Advanced Plan. Enjoy!
