Picnic Week: Fresh Carrot Dill Slaw

Picnic Week continues with a fresh Core Plan coleslaw – Carrot Dill Slaw.

Fresh Carrot Dill Slaw
Makes 5 Servings

2 Tbsp fresh lemon juice
2 tsp fresh lemon zest
3 Tbsp olive oil
1 clove garlic, minced
Sea salt, to taste
Fresh ground pepper, to taste
2 cups organic carrot, grated
3 Tbsp fresh dill, chopped
2 Tbsp organic green onion, thinly sliced on bias

Whisk lemon juice, olive oil, garlic, sea salt and pepper in a medium bowl. Add carrots, dill and scallions; toss to coat. Chill 2 hours to over night before serving.
